Pastrami brisket made using the Fette Sau method

1 untrimmed Brisket


1 gallon room temp water

bag of ice

1 1/2 cup kosher salt

1/4 cup pink salt

3/4 cup dark brown sugar

3/4 cup white sugar

1/2 cup honey

10 whole garlic cloves

1 whole white onion, sliced

1/4 cup pickling spice

Pickling Spice:

2 Tbsp coriander seed

2 Tbsp mustard seed

1 Tbsp whole black peppercorns

1 Tbsp red pepper flakes

1 Tbsp juniper berries (or all spice berries)

1 tsp fennel seeds

8 whole cloves

1 broken cinnamon stick

2 broken bay leaves

1/4 cup cracked coriander seed 

2 Tbsp cracked black peppercorn

1 1/2 cup dark brown sugar

1 cup ground espresso beans

1/4 cup ground black pepper

1/4 cup ground garlic powder

2 Tbsp cumin

2 Tbsp ground cinnamon

1 Tbsp cayenne
